I hope everyone had a wonderful fourth of July weekend. As for me, the husband and I threw a Mexican-themed fiesta for our holiday experience since we missed celebrating Cinco de Mayo, I'm from New Mexico, and we are strange. It was a blast.
Ohmeohmy, did I make a ton of food including, Mexican pizzas, guacamole, homemade salsa, tortilla chips, moco coco cupcakes, and cinnamon sugar tortilla crisps with warm chocolate sauce spiked with a little red chili powder. Um, and did you know you can now buy boxes of margaritas, similar in theory to the wine boxes that stole my heart not too long ago? Well, you can and I highly recommend them.
Alright, on to the spread.
I wanted to do a trial layout before the food was ready. If I don't do it that way, I forget what I have to serve on and I would quickly dump my food into some weird dish I had handy. Since we got all kinds of stuff for our wedding, I thought it would be a waste if I didn't use a lot of it. The wall-hangings used as table runners are from New Mexico and given to me from my mother.
The cupcakes had tequila in them.
I tried to find red tortilla chips to blend my two themes of a Mexican fiesta and the fourth of July. However, I did not and just used a red napkin to line my bowl of blue corn and yellow corn tortilla chips. Get it? Red, white and blue. Cute, eh?
